If you’re looking for an yummy zucchini bread recipe, then I have just the one for you. You can whip this up with either fresh or canned shredded zucchini.

It’s hard to believe zucchini bread can be healthy, but it is. Zucchini bread is both low in fat and heart healthy.

Zucchini is full of vitamins such as vitamin K, riboflavin, vitamin B6, folate, magnesium, and potassium in it.

While some people may prefer to bake with a peeled zucchini, leaving the peel on is much healthier because you’re getting extra nutrients such as lutein and zeaxanthin, which are great for promoting healthy vision.

So is it baking 45 minutes or 1 hour?

Cooking times may vary depending on your oven and the amount of batter in each pan.

So, keep a close eye around the 45 minute mark when baking your zucchini bread. Inserting a toothpick in the center is a good way to check for doneness. If the toothpick comes out clean, that’s when it is done.

A great way to keep the tops from over browning is to tent a piece of tin foil over the pan.

What if I can’t eat two loaves, how do I store it and still keep it yummy?

Congratulations, you have more self-control than my house does, and I commend you for that. However, when I do manage to make zucchini bread and have “extra” there are several ways to store it.

The best way to store zucchini bread is to wrap it tightly in cellophane wrap or aluminum foil.

You may also want to keep it refrigerated, depending on how quickly you plan to eat it. This will last longer than three days this way.

Zucchini bread can also be kept in an airtight container.

What if I want my bread to last longer or to make “extra”?

Freezing your zucchini bread will make it last longer. Wrap it first in cellophane wrap or aluminum foil then place it in a resealable freezer bag.

Be sure to label the freezer bag, otherwise you may end up digging through your freezer and only finding a “mystery loaf”, that could either be a meatloaf or a bread.

Ingredients
  

  • 3 eggs
  • 2 cups sugar
  • 1 cup cooking oil
  • 2 tsp vanilla
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp cinnamon
  • 2 cups zucchini, deseeded and shredded
  • 1/2 cup chocolate chips

Instructions
 

  • Preheat oven to 350. Spray bottom only of 2 loaf pans.
  • In large bowl, beat together eggs and sugar. Add oil and vanilla, mix well.
  • In separate bowl, combine all dry ingredients, Add dry ingredients to creamed mixture, alternating with shredded zucchini. Fold in chocolate chips.
  • Split batter evenly between the two pans.
  • Bake at 350 for 45 mins to 1 hour.
