Absolutely!! Long grained rice or cauliflower rice can be used in place of white rice. As for the broth, either beef, chicken or veggie broth all work well in this Easy Stuffed Pepper Soup. Ground chicken or turkey can also be use in place of the ground beef.
What about making this in the crockpot???
Of course! Remember when I said Easy Stuffed Pepper Soup. This is great to make in a slow cooker/crockpot. Just brown the beef on stovetop with the onions. Place the beef/onion mixture in the slow cooker/crockpot with all the other ingredients and cook on low for four hours.
Easy Stuffed Pepper Soup
Ingredients
- 1 pound ground beef
- 1 small onion diced
- 3 cloves garlic minced
- 1 large green pepper diced
- 1 28 oz can crushed tomatoes
- 28 oz beef broth
- 2 tsp salt
- 1 tsp black pepper
- 2 cups prepared rice
- shredded cheddar cheese optional
Instructions
- cook beef and onions over medium heat in large dutch oven until no longer pink, drain and return to dutch oven
- stir in garlic, green pepper, crushed tomatoes, salt and black pepper
- add broth and stir well, bring to boil. turn down heat and simmer until veggies are tender
- stir in cooked rice and simmer 5 minutes more
